{"id":7729,"date":"2017-10-06T11:43:21","date_gmt":"2017-10-06T09:43:21","guid":{"rendered":"https:\/\/www.clubesse.it\/?p=7729\/"},"modified":"2017-10-06T11:43:21","modified_gmt":"2017-10-06T09:43:21","slug":"fileja-nduja-onion-recipe-calabrian","status":"publish","type":"post","link":"https:\/\/www.clubesse.it\/en\/fileja-nduja-onion-recipe-calabrian\/","title":{"rendered":"Fileja with &#8216;nduja and crunchy onion, Squillace&#8217;s hot Calabrian recipe"},"content":{"rendered":"<h2>The Club Esse recipe book is enriched with a tasty and spicy plate, passing this time through Calabria, in the Gulf of Squillace, where the Executive Chef Carmelo Militano reveals the <em>Fileja with &#8216;nduja and crunchy onion recipe<\/em>.<\/h2>\n<p>A<strong> holiday<\/strong> in the oasis of\u00a0<a href=\"https:\/\/www.clubesse.it\/en\/project\/club-esse-sunbeach\/\">Club Esse Sunbeach Resort<\/a>, in the wonderful Gulf of\u00a0Squillace in Calabria, it&#8217;s made of clear sea, warm sun and a cuisine of genuine, strong and delicious flavors.<\/p>\n<p>The <strong>Fileja<\/strong> (or Fhilatierj) are a Calabrian macaroni-like pasta and known by\u00a0many names in\u00a0different areas; they were traditionally homemade with a typical squared-section tool called <em>u &#8216;f&#8217;rzuh&#8217;<\/em>.<\/p>\n<p>Their shape and body are marvelously matched with tasteful sauces with strong flavors and often <strong>spicy<\/strong>, as this is the main characteristic of Calabrian cuisine.<\/p>\n<p>Today we continue our culinary journey by proposing you the <strong>simple recipe<\/strong> of this traditional Calabrian pasta combined with another typical product, the &#8216;nduja, the spreadable and spicy sausage, famous all over the world.<\/p>\n<p><strong>For 4 People:<\/strong><\/p>\n<p>&#8211;\u00a0400 gr. of Fileja<br \/>\n&#8211; 3 tablespoons of &#8216;nduja<br \/>\n&#8211; 300 gr. of cherry tomatos<br \/>\n&#8211;\u00a0half a glass of white wine<br \/>\n&#8211; extra virgin olive<br \/>\n&#8211;\u00a0salt to taste.<\/p>\n<h3>How to cook the\u00a0Fileja\u00a0with \u2018nduja and cruncy onion<\/h3>\n<p>In a hot saucepan, put half the onion sliced \u200b\u200binto the oil, add <strong>&#8216;nduja<\/strong> to melt it and blend it with white wine.<\/p>\n<p>Then add the tomatoes with a pinch of salt, one of sugar and two basil leaves, baking the sauce for <strong>15 minutes<\/strong> on medium heat.<\/p>\n<p>Meanwhile, you have already sliced \u200b\u200bthe remaining onion and, after having floured it well,<strong> fry it<\/strong> until it is crunchy at the right point; after which, with a piece of scottex or absorbent paper, dry and keep it warm.<\/p>\n<p>The Fileja must be cooked in plenty of salted water until they become <em><strong>al dente<\/strong><\/em>; now drain the pasta and put\u00a0it in the pan, where you&#8217;ll\u00a0stir-fry the Fileja with the sauce and a spoon of baking water.<\/p>\n<p>Serve it with a dusting of pecorino, if you like, crispy onions and <em><strong>buon appetito<\/strong><\/em>!<\/p>\n<p>The final tip, is to approach this plate, in which triumphs the taste, with a good glass of a good <strong>red Calabrian Cir\u00f2<\/strong>.<\/p>\n<p><strong>LINKS YOU MAY LIKE:<\/strong>\u00a0<a href=\"https:\/\/www.clubesse.it\/en\/eat-on-holiday-club-esse-recipes-healthy-tasty-diet\/\">Eat on holiday: the Club Esse&#8217;s recipes for a healthy and tasty diet<\/a><\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>The Club Esse recipe book is enriched with a tasty and spicy plate, passing this time through Calabria, in the Gulf of Squillace, where the Executive Chef Carmelo Militano reveals the Fileja with &#8216;nduja and crunchy onion recipe.
